🥜 PB Choc Mousse

A creamy, rich peanut butter mousse that’s high in protein, low in effort.

Serves 4.

 

Ingredients

Peanut Butter Mousse Layer

Choc Ganache Layer

  • 80g dark chocolate
  • ¼ cup canned coconut milk


Method

  • In a small bowl, sprinkle gelatin powder over 2 tbsp boiling water. Whisk immediately to dissolve. Let sit for 2 mins.
  • In a blender, combine Greek yogurt, protein powder, PB powder, sweetener and bloomed gelatin. Blend until smooth and creamy.
  • Divide the mousse into 4 ramekins or jars. Cover and refrigerate for at least 1-2 hours to set.
  • Melt dark chocolate in a microwave-safe bowl in 30-second increments, stirring after each session.
  • Stir melted chocolate and coconut milk together until glossy and smooth.
  • Pour the ganache over the chilled peanut butter mousse. Return to fridge for another hour to set.
